A Fresh and Tasty Dinner menu



Here is a great meal I love to make, 3 parts easy peasy, and delicious

Salad: 4 handfuls of arugula or greens
1/2 fennel bulb sliced thinly

dressing: 3tbsp olive oil
1/2 lemon (squeeze out the juice and zest)
salt and pepper
1 tsp if coarse ground mustard
1/2 tsp of brown sugar

mix together and serve

Main: Roasted Veggies

1/2 fennel bulb chopped in big chunks
1 small zuchinni
1 cup of cherry tomatoes
3 cloves of garlic
3 green onions chopped in big peices
olive oil, and a big splash of balsamic vinegar
salt and pepper

put all items in a roasting pan, place in oven at 375 for 30 minutes.

Salmon : Large fillet of Salmon

place Salmon on a roasting pan and add:

a drizzle of olive oil
squeeze other half of lemon onto salmon
1 tbsp of any spice you like ( good herds to use with salmon are cumin, poppy seeds,
curry, saffron)
salt and pepper

put in an oven at 375 for 20 minutes, or until you see no reddish colour in the middle.

Great meal, Salmon with roasted fennel and cherry tomatoes with an arugala fennel salad. I think a nice dry white wine would go great with this. Any suggestions ?
